So I'm putting together some basic (lv 78) Crafted Blue sets for my 80s. (One of each class, dual spec on Pally, Warrior, Sham, Priest, Druid, DK)
I don't want anything insanely good, just enough to say "I went and got some gear to be ready". Only looking at regular 80 instances and ToC (maybe some easy heroics), not trying to jump straight into raids and get carried.
I had no problems with my plate wearers and their sets, farmed a ***kload of ores and smelted, bought some frz orbs and the rest took care of itself. (Even did the Titansteel pieces)
However, with leather I have hit a wall. I DO NOT like farming leather, I tried but I just cannot seem to motivate to do it. For the leather/mail sets I am looking at somewhere around 3000 Borean Leather, not including ALL the recipes I had to buy.
I do realise that different servers have different economies but I am just looking for an overall gauge, currently I am not buying any stacks of Borean Leather over 12g/stack (AH) and asking 10g/stack for direct sale in trade.
I can pretty much log on once per day and buy 5-15 stacks at the price I ask and leave the super expensive ones alone (there has been 35g/stack for sale for about 2 weeks). So ....... are the prices I pay about right on your server? Am I asking too cheap?
TL:DR What is the "average" price of a stack of 20 Borean Leather on your server ?
Note: I have every crafting profession at 440 + (all max except scribe/tailor/LW), all on the same server so crafting/sharing is no problem, I just cant seem to find someone that has 1000+ Borean Leather to sell.

The last time I sold Borean Leather I think I got like 5g for it. So I either tried to sell when the market was flooded, or my server sells if for uber cheap.
The market on my server (EU-Nagrand) shifts quite a lot depending on the day of the week.
I have struggled to sell for 8g/stack at the weekend and then been able to get 13g/stack during the week. It got to a point where I refused to sell anymore due to the "high" listing cost and ended up vendoring many stacks.
None of my toons have leatherworking as a profession as yet, so all my leather is just sitting on my guild bank alt until the time that I do actually level LW.

I know heavy borean is about 6g apiece on my server, not sure about the regular stuff though. I would hope it's a little cheaper. 
It's not really worth buying, though, when it's so ridiculously easy to get by killing higher level mobs. For instance, the gun'drak raptors will give you 1-3 pieces of leather each, and have a chance to drop an extremely rare vanity pet. Why spend gold when you could be making it?
I've found that farming up leather isn't nearly so tedious if you combine it with something else. Running Heroic Nexus, VH, or CoS will get you a fair amount of leather as well as dragonscales, emblems, and loot. If you have cooking on any of your toons, farm up the meat you need on your skinner so you get a little leather out of it too. If you're working on Sons of Hodir rep, make sure you do Polishing the Helm, and kill a few more jormungars in the cave than you really have to while gathering the viscous oils. If you always keep enough bag space clear to pick up whatever trash the mobs drop, you'll end up with a fair amount of leather each day (as well as a little extra gold from what you wouldn't normally have killed).

^^ Same. Anyways, a stack of reg borean leathers, on US-trollbane, sell for 5-6G a stack which is great considering a stack of 10 heavy borean leather sells for 30g . I enjoy buying up a bunch or reg leathers to skill up LW. However, when i DO farm leather, the storm peaks in the Sons of Hodir valley and the Engine of the Makers area is a great place to AOE grind all the mammoths for leather, cause they roll in packs of 5-8. After half hour or so, i can get 2-3.5 stacks of leather plus a stack of rhino meat and chilled meat each. Profit for me.

I regularly sell borean leather for 7 gold a stack (everyday)
I can sell a stack of borean leather pretty reliably for 10g on my server, although I avoid trying to put them up for sale on a weekend.
I find farming the leather quite relaxing actually - I do cooking dailies on my main and four alts so I burn through meat like mad thus giving me an extra degree of perceived productivity when I'm farming the stuff. Then again, my LW is also a feral druid so farming is easy as cake - about five seconds max between targeting and skinning the mob.
Edit: Oh yeah, you want an easy way to farm leather - do heroic VH every day - you'll walk away with nearly four stacks a run if you skin everything.
