I recently had a late night brain fart and dropped mining for enchanting with my warrior. After spending every bit of gold I had leveling, I can't justify dropping it. Now I have a DK and was going to go Herbilism/Alchemy, therefore having potions and enchants for both toons. My warrior's other profession is skinning, it doesn't make much, so I was thinking I should drop it for inscription and then my DK can feed the warrior herbs and I could actually start making some gold back and I'll cover scrolls, potions, and enchants. Any thoughts?

Personally, I'd check the prices of the potions etc first. You might be able to make more just by herbing stuff, selling it, and buying the potions than by making it yourself. Another smart idea would be to get into a guild which has high level crafters, give them the mats, and let them make whatever you want. Saves you a lot of time and effort for something hundreds of crafters can do. The best reason to pick a profession is because you like it. The second best reason is to pick it for unique things; trinkets, sockets, gems, equipment, thread, linings, etc.
