Take a deep breath.
OK, feeling calmer?
Don't worry about the jewelcrafting in your spell book. It isn't one of your abilities. It's just that when Blizzard created the Draenai, they gave them a talent bonus for jewelcrafting. This means that if you choose jewelcrafting as a profession, then you'll receive an inherent bonus for it. It's just like your character's ability to heal better and faster - it's automatic for all Draenai, not just natural healers.
So go ahead and pick any old trade skill you want as your professions, but if you do end up picking jewelcrafting anyways, may I recommend mining as your other ability?

Keep it real.

Expanding on what Seanhillz said -- Some races come with inherent "gifts" such as this. Taurens, for example, have a natural +15 skill for Herbalism. Gnomes are +15 to Engineering. And Draenei, as you have found, get a bonus to Jewelcrafting.

Just because you get the bonus doesn't mean you have to take up the craft.
