Profession HelpFollow

i have a lvl 44 warrior and i completely screwed his professions up. he was my first character and i had no idea what i was doing. he currently has 300 skinning and around 150 enchanting. i wanted to know if i should drop them for two gathering professions or if at my level i should focus on professions that benifit my warrior more and which ones. i'm also a PvE warrior. ty for your advice and imput.
