you take it to the nearest auction house and put it up for sale. However, most people don't put only a single fish up - they wait until the get a stack of 10 or 20.
Or, if you are an alchemist, keep it. You will be able to use it for potions.

BUt, before you start stowing away the fish, you should check to see whther the Blackmouth oil sells for more than the fish. If it doesn't, then you should sell the fish and buy the oil.
