It says you can only have 2 at a time...so how can you drop a profession you no longer want?
Click on it in your skills window, it will appear in the bottom window with a little circle with a line through it next to it. Click on the circle and it will ask you if you are sure you want to unlearn that skill.
Make very very sure you want to do that, if you unlearn a skill you lose all skill and recipes you had, even if you change your mind and get it back you start at 0 again.

It should also be clarified...when they say you can only have two, they're talking about primary trade skills. Fishing, Cooking and First-Aid are secondary and you can have all three as well as the two primaries.
I've seen this a number of times. People pick-up one or two of the secondaries and think they're stuck with just those two.
You won't see an option to cancel Fishing, Cooking or First-Aid, as there really is no reason to.
