How do I raise them past 225?

Gotoo Feralas over lvl40 and raise it to Artisan there. At the Northern island there is a Master alchemy trainer.
herbalism you can just get from the master herbalist in SW. The Master Alchemist is in Feathermoon, in Ferelas, in a big tree building. Have to be level 40 to get Artisan, and it costs 5g (or 4.5g if you are honored w/ darnassus). To get to Feathermoon, Take the road S from Desolace, then when the road forks go right towards the Ocean. You will come to a dock, get on the boat and it will take you to Feathermoon. There is a hippogryph point there, so you can fly back from Darkshore or Nijel's Point.

Just so you know, there is also an herbalism artisan trainer in Booty Bay. 'Tis nice, as the herbs in the area will raise you up to at least 280 (I'm at 276 right now).

Actually to get Artisan level, you need to be level 35... not level 40.
