Are they all random, or do they keep spawning in the same spot? If they do, are they any maps that show where they spawn?

They appear in the same spot, generally on a 20 minute timer. Theoretically you could harvest a point and then wait 20 minutes for it to respawn, but this is hardly the best way to go about it. If you want to see it in action, take a few trips along the edge of Loch Modan and harvest the copper and tin you find. After a few loops around you'll start to notice where the nodes are, and with time you won't even have to look at your map anymore: you can just run from spot to spot to check and see if the harvesting point has spawned yet.

They dont alway spawn in the same spots. However there are a number of pre-dertermined spots where the ore will spawn which is why its easier to find ore once you have been in an area for awhile =). The 20 min timer sounds about right...but its variable by about +/- 5 mins i think...since you can mine out an area and it wont be back to its full quota of nodes for about 40 mins. And a node might spawn in an area that you might not have discovered ..so you might gradually 'lose' nodes in the area you are farming...if this occurs just roam further =).
Mapping these spots is difficult but searching for say..iron ore on this site or thott will give you a map of where iron nodes have been spawning and all you have to do is travel to that area and familiarise yourself with where the nodes spawn.
