I've heard RDM was one of the harder ones. Most RDM I've talked to about it say it's all a matter of luck; if you pop chainspell and he hits you with silence, or worse, paralyze, it's all over.
BRD I imagine can't be terribly easy either. You gotta go borrow or buy a set of melee gear, skill up your sword to a decent level, and then try to fight him.
Most melee jobs are pretty much the same thing... opo necklace, sleep pot to get TP, 2HR if applicable, WS him, I Wing, WS him again, and then just beat him down.
THF Maat is hit or miss if you just go for the steal method; load up on all the +Steal gear you can and pray. If you melee him instead, then you have a little more control over the situation but it's not a terribly fun fight I imagine, given that the bulk to THF are used to /NIN and having Utsusemi and a second dagger from the last 46 levels.
BLM Maat is just nuke him, stun him, try to sleep him, nuke him, try to sleep him, nuke him. Or you can just nuke your heart out.
WHM Maat has the advantage of having an alternative win mmethod like THF: you just need to outlast him for 5 minutes. You can either accomplish this the expensive way by loading up on drinks and potions and elixirs and ethers or the cheap way by going into the fight @500ish or so and when you're down to 200 HP and 50 MP, flash him and pop miratete's memoirs. Shultz Strategem/Ginuva's Theory/Dragon Chronicles would work too but you;kk need to be a lot closer to level. I went in level 66, 12 xp to 67.
