When selecting a mango, the skin should be slightly yeilding. The most important factor is the smell. If you can't smell anything when you sniff the skin, it isn't ripe yet. If it's got black spots on it, it's over-ripe.
There is a very large pip in the middle, and the mango flesh has an almost unique way of clinging to the pip, close in to it. So you will have to shear through the flesh near the pip with a very sharp knife. Stuff it,
Being shown how to cut around the pip will b much easier than me tryign to describe it. Near the end the guy turns the "cheek" inside out, to get a "hedgehog" of mango. He cuts those all off at teh base, to make mango cubes. You can skip the cutting bit, and just nibble off each mango segment from the hedgehog by mouth.
Really, I can't describe to you how fragrant and gorgeous a good mango tastes and smells.
I almost always eat them on their own, but ieces of them also go great in salads, or chicken salads.
