Hmm, listing three to keep it concise, I would have to say...

One Flew Over the Cuckoo's Nest

Although I appreciate the novel more in some ways, it's still an excellent adaption. Truly one of the last movies I've seen that really connects with a lot of people. Jack Nicholson's best performance in my opinion.

Seven Samurai

Although this film probably wouldn't appeal to a lot of the younger generation, I still find it to be an amazing film.

Pulp Fiction

Not much to say about this one, mostly a love/hate type of film from what I've witnessed. The way it is with Most of QT's movies I suppose.

Anyways, by only mentioning 3 I'm skipping tons of other movies, but everyone has listed lots of excellent movies. Cool thread.

Marres! You beat me to it!

Donnie Darko kicks so much ***!

Requiem For A Dream, too... I thought I was the only other person in the world that knew about it >.<... Same with Donnie Darko. I just can't believe how stunningly ORIGINAL both those movies were! The style... the everything.

Fight Club! And yes... Eddy Norton does a lot of great movies!

I enjoy anything that's deep, philosophical, or makes you think twice and watch the movie again (Notice, that in each of the above movies... there's some sort of puzzle that solves itself, revealing a vast, profound underlying storyline).

Tops on my list is Jaws.

The runners-up include:

Raiders of the Lost Ark
Anything by Tom Tykwer, notably Run Lola Run, Winter Sleepers, Princess and the Warrior, which all have awesome soundtracks as well
Das Boot
Election
Alien
Ronin (DeNiro is a badass and the chase scenes are top notch)
Dr. Strangelove
The Minus Man
The Sweet Hereafter

And I'll second yossarian's notion that Catch-22 is the best book ever written. The movie wasn't half bad, but the book is incredible.
