Since ammo becomes very expensive, would it be better in the long run to level in crafting to produce the ammo yourself? Also, what crafting skills would i need to make arrows and bullets?
The most important aspect of this game is to have fun. Yeah, some job/subjob combinations are better stat-wise, but if you wanna be a Elvaan RNG/WHM by all means go for it. If its what you wanna do, make it work and have fun.

I definitely think that making your Arrows/Bolts/Bullets is the way to go to curb the high costs of maintaining a Ranger. However the recipies for making these things is a bit complex. To make arrows and bolts requires Smithing and Goldsmithing to first make the arrowheads and boltheads. Then Carpentry to make the actual arrows. Making Bullets requires Goldsmithing and Alchemy (i'm not positive on this part).
So its going to require you to level up 4 tradeskills which can be quite a costly endeavor.

you forgot bone for those bone type arrows, and making a +1 Power Bow wich is really good
The skill levels required to make arrows also changes rapidly. Bone and stone arrows (lvl 7 and 1) can be made by Amateurs. However, you need a woodworking of 21 to make the next set, Iron, which you use at lvl 14. So, if you want to make your arrows, plan on spending a lot of time between 7 and 14 raising your woodworking skill.

or... you could find a linkshell that is synth happy and get them to make you the things you require.. :)
