More really for the dmg 44 delay 216.

But, is it a viable main hand weapon when off-handing the acc/dex+ kanata route?

Do those just enhance the first hit, or multiple hits?

Or should my wife go for the str/att+ route? (apkallu's >.<)

You could do 2x acc katanas too. Its something to consider.

As for damage... i dont know. Depends a lot of what you are fighting. 4 base damage is huge on a 40 base damage weapon, and 6 STR + 16atk is also great on a atk starved job. If you have a low pDif, the atk katana should pull ahead. If your pDif is high, the damage one should pull ahead.

Anyway, the WS katana is definitely a option if you dont want to do the fire trials.

I'd maybe split the difference and do the STP version Uzura. The base damage is one lower, but with the possibility of higher tiers of Dual Wield, more Dual Wield gear, and generally lower delay of some of the newer weapons, trying to preserve/reduce attack rounds to 100% TP might be something to look at.
