There are hundreds of resorces to extract and they all spawn at random in different locations sometimes there for weeks and sometimes only days, but if you want to make some quick profit then try to mine anything that is 800 or above in quality. You can mine lower quality resorces if you like and sell them to crafters who are grinding, but you won't make as much money per unit.
