It seems I turned it off forever ago and now I cannot for the life of me recall how to display guild tags. Help me? Please?

I'm not sure offhand, but it's likely under the User Interface section of options. Make sure you click the "advanced" button in the upper right-hand corner of the options window so all of the options will display.

As Cyliena noted, you'll find the check box under:

Options / User Interface / Name and Chat Bubble / Show Guild Names
