I think I understand it but I'm not sure. If I set it at 100 that means all my experience will now go into point for Advancemnts and I will stop leveling?

Yep thats exactly what it means. Likewise if you set it to 50, then half your xp goes to your leveling, the other half will go towards AA xp.
A lot of people use this to stay in an area longer (so the quests remain green and give more xp), or to buildup their AA points (either to save, or to spend in things that are available).

I am going off topic here, and guessing you are Pagan or Wiccan based on your 'thank goddess' already in your sig. If you follow either of those creeds then then your sig would have a bit more leverage. Otherwise science trumps that.
