I've pretty much soloed my zerker up to level 84 and thoroughly enjoyed it, so much that it has taken over as my main. Progress has been interrupted of late by my New Halas conjie - which is not quite so easy to solo, despite the tank pet. I played an SK for a long time, but severely lacked AAs.

Solo zerker = pull with bow, AOE, mash to a pulp = fun :)
And when it's an ickle fairy doing the mashing = lots of fun :D

I'm just not crazy about how the faes move. It took me a long time to adapt to how my frog moves, too; but I had to stick with that one - the frog monk moves are just too good to miss. Maybe I'll try a rat 'zerker someday - mices is awesome.

Conjurors are so delicate. What advantage do they have in later levels that would make the pain of leveling them worthwhile?

Their mage pet is supposedly a better healer than the necro mage pet, a lot of people enjoy having them as support dps for that reason. As with necro though, of course we are delicate that's what our tank pets are for, just learn not to out aggro them when hunting solo.
