Only 2 things that could be the problem really: You aren't acc capped or you aren't utilising a proper threat rotation.

speaking of acc cap whats the best acc (by best i mean what gives highest acc) food for a tank? Also whats the best acc food for a str based dps?

Our tanks were always eating finger sammies... but idk if it's for accuracy or not ><
I think things like bread, toast and pancakes tend to be tank food. The "best" tank food would be the one that gives you the most VIT and parry while still getting you the accuracy you need. And hopefully, it's affordable and available. It looks like Popoto Pancakes, Finger Sandwich and La Noscea Toast are candidates for end game tank food.

Finger sandwiches work, but anything around that same tier that gives accuracy would work. I'll check out my crafting list when I have a chance and see if I can compile a little list.
Remember also that in a pinch, you don't have to combo all the way up to Butchers Block. The move itself has decent enmity and I believe the combo bonus is mainly increased damage. Granted, more damage = more hate, but the bulk of the enmity generated by that move is not damage based.
