Yeah, I'm no gourmet, but I do have cooking skills, and leftover rice has many possibilities of nom. If rice is dried out, it's quick and easy to re-steam. Also, if you want fried rice, ideally the rice should be at least a day old. Of course, this means the rice has to be cooked properly originally, which is where any over/undercooking factors in to integrity.

Mussy rice (over done) is gross, hard (under cooked)/Dry (old) rice is never that good either.

However, a casserole that uses rice oddly (to me) taste good when there are mussy and dry parts.
^- these, rice is easy for small numbers of people and a complete nightmare for huge events like the one you're doing.

if you absolutely have to have a carb of that consistency, then Orzo is easier to work with (and looks fancier IMO), just remember to add extra oil/butter and keep it warm or you'll end up with a block of pasta rather than a pilaf.

appetizers are the best... bacon wrapped scallops, bruschetta on toast, marinated asparagus, crudite, brie, pate. they had food at my wedding and they packed picnic basket but we got not any of the good stuff and wound up at McD's Love the hubby for that - i was starving!!!

You say this only because you're married to an Asian. I'm the exact same way. Ray knows that I don't eat rice that's even 6 hours old. I have to eat freshly cooked steamed rice. If it's old, it must be made into fried rice and eaten right then. I don't eat old fried rice. But then again, rice of any sort doesn't last very long in my household.

No, that just means you're a coffee expert. For certain connoisseurs, once the coffee has been on the burner too long and it takes on that bitter burnt taste, it's gotta go. I knew people that have to have the office coffee brewed once an hour. I'm almost positive that DSD would agree with you on this.

but I also prefer Turkish coffee or chai if it's available

Smoked salmon on toast points always good, spinach dip, bruschetta (did I already say that?), sweet and sour meatballs, pate, MINI QUICHES, marinated asparagus, brie and any cheese... I can go on. Mmmmm appetizers, my favorite way to eat.

I can tell you a quick and tasty appetizer but its not visually very pretty to look at. Take 1 block of cream cheese, 16 oz of Salsa, small can of Chili Peppers, and 1 cup grated Colby cheese. First warm the cream cheese up so it will blend better, about 1 minute in the microwave should be more then enough. Mix it all together and then chill for awhile. You can vary the spiciness of it as needed between the type of salsa and amount of chilies you use.

It tastes really good however it looks like vomit lol, so it might not work for your situation.

For you Coffee people look into getting one of These. While I don't drink coffee Mom and some of her friends do, they may not be connoisseurs but I guess the last cup tastes just as good as the first.

That is currently sitting on my kitchen counter. I haven't tested it past the 10 minute mark because I make the coffee and then drink my one massive cup. The hubby drinks it later, but he will drink old coffee.

About a year ago, when I started at this job, I had to make coffee, something I never had to really do before at a job. The first time I made coffe, I started stressing because the grounds were mixing in with the coffee for some reason (bad filters and crappy machine). I have now realized that I shouldn't have worried because these guys in the office will drink coffee 9 hours old.

With the right rice cooker you can get rice to last. Of course you have to recover from the heart attack after you find out how much your wife spent on said rice cooker.

Can you make beef stroganoff? I have made tons of it using a pressurer cooker and chuck roasts. Get chuck steaks if you are not comfortable triming that much meat or pressed for time. (Yes I know it isn't real stroganoff made that way.) Secret is you don't add the sour cream until right before serving it. It goes really well with made from scratch pasta.

Slow cooker chicken is good since after you get everything in the cooker you can go work on other dishes. Just remember to brown the chicken and saute the vegetables before adding them to the cooker.

Vegetarian go with a good layered ratatouille stuffed in a crepe.

Dinner rolls go well with the dishes to soak up juices from the above dishes.

My favorite multigrain bread follows

Soaker
.25oz wheat bran
.75oz oats
1oz quinoa or amaranth
2oz water

Dry
13.5oz bread flour
1.5oz brown sugar
.38oz salt
1Tbsp yeast

Wet
2oz cooked brown rice
1.5 oz honey
4oz buttermilk
water as needed say 6oz

Since you are a cook I will skip the mixing, proofing, window pane test, and just go to the roll into balls and cook at 350 until done around 20 minutes. If you are making loaf it would be 20min turn and then 20-40 min more. Make sure you cool them for at least an hour. Two hours for loaves.

Vegetables
Roma green beans are hard to ***** up and look fancy since they are different. (large flat green bean)

Broccoli, rice, and cheese casserole made from scratch is easy, tastes great and people remember it. If you are going to use canned soups with it then please don't make it.

Desert

In season betty's cobblers crips are all good. Make a couple of different fruit based ones. Coconut cake is easy to make. You can add some rum to the coconut cream soaker and make it a rum cake.
