Having done both, the only one that practically requires you sacrifice your life for it is IronForge. The elder is in a pool about a quarter way around the outer ring. Several L85 guards close by. If you have some sort of stealth, invisibility or a hunter's camo you can sneak in but they've even got roving guards set up to detect invisibility. If nothing else, when you approachh the elder, you automatically decloak.
I managed to die only once - if any horde player did better I'd love to hear how. I did talk t a couple of others in game. Everyone who tried to fly into IronForge (that I know of) got shot down.
Ironforge is very easy if you're a non-druid class that can be a tank. Simply fly as high as you can with your tank spec active (you cannot be shot down if you're a tank), and strip yourself naked except for rings/neck/trinks/relics/cape (basically anything with durability, take off) and you can easily break aggro on the guards by flying near the ceiling. The only guards who should aggro are the ones right next to the gate as you fly in. Once you get to the elder, drop straight down, pick his quest up and fly straight back up.
If there are no players around, you should easily be able to hearth right next to the elder.
If you got dismounted and died, you can GY walk over to the elder and hearth at the elder.
As for the original topic: Getting Elders of the Horde is harder, because...
1). There's almost never anyone at Darnassus and Darnassus has no ceiling.
2). Stormwind can be gotten without getting flagged at all!
3). Ironforge is the only mildly difficult one, but a couple corpse drags and you got it easy.
Compare that to...
1). Orgrimmar is going to be a pain in the butt, unless you are extremely lucky. It is the capital of the entire faction, where everyone hangs out. There's bound to be players just itching to kill your butt.
2). Undercity is a bit easier, but requires flying in through a tiny hole in the roof, and then going into the next room, maybe dismounting depending on what you're flying on, getting the elder and then flying back out. Lots of opportunity for another player to nail you.
3). Thunder Bluff is the only easy one, you fly in pick it up, fly out, most of the time without even getting aggro.
They are both fairly easy, thanks to Flight Master's License. If it weren't for that, then the Alliance would have it 10x harder than the Horde, getting up to the zeppelin towers would be a nightmare as an Alliance character.
