To be fair, rez takes around 64-72% of your base mana pool, so it's possible for a feral druid/enh shaman/ret pally to literally not have enough mana to rez. Unlikely, but possible. I know on my druid I have to drink if I'm going to rez more than one person, my passive regen is that low.
What I've found helps with skinning is to not loot until you're ready to skin. Someone can't ninja-skin a mob if it still has loot on it. As for mining/herbing, there's a little latency between what you see on your screen and what they see on their screen; they might think they landed first, you might think you landed first. Not that this is always (or even mostly) the case, but it does happen.
In the interest of full disclosure, I've gotten pretty cut-throat with mining since Cata came out, especially before they added obsidium to Deepholm. Hyjal was a mess, with people doing everything they could to ninja a node out from under someone else. Now, if I think a mob is gonna agro me, I'll sick my ghoul on it as I land so I can mine without getting interrupted. If someone else is neck-and-neck with me going to a node and I see a mob that will aggro, I let him land first and get attacked. Maybe he has a stun/cc or a pet that will let him get the node before me, maybe not. If I do get the node, I at least help kill the mob.
