I'm planning to buy World of Warcraft soon. I'm from Europe, but I want to play on a US-server, because there's people there I know. Is this possible with the EU-version of the game? Would I experience much more lag?

I believe that you must have a North American version to play on NA servers. If you're in Europe, you'll have to get hold of a US version. Can't say on the lag, though.
