1. All major cities have their own map. Just press the M-key on your keyboard to open up the map. As for leveling spots, basically go where the quests tell you to go. You'll discover more and more of the world map as you explore new areas. You can always view the world map by pressing M. Right-click the map to zoom out and then click the various areas to zoom in on them.
2. There is no "most wanted class" for anything. Except perhaps instance runs. You can solo level to 60 if you want to (plenty of quests). You should pick the class you enjoy, not the class you think will benefit a potential guild the most. That being said, Warriors and Priests are pretty popular because of their vital roles in a group. Warlocks and Druids are the least played classes on the servers I've been on.
3. I wouldn't start a crafting profession at all, unless you really, really, REALLY like to blow money on it. If so, stick to gathering professions (herbalism, mining or skinning) until around level 40. Unless you play a Warlock or Paladin who get their mounts for free, buying a mount (and riding skills) will cost you almost 100 gold. As for guides to the various crafting professions, check out
Allakhazam's Trade Skills Forum first. It's not hard finding the items needed for crafting. Unlike many other MMOs there aren't different qualities of the materials needed for crafting, Heavy Leather is just Heavy Leather, there's no difference in quality. Once you learn to craft a new item, open up your crafting menu (clicking the icon of the crafting profession in your spellbook) and click the item you want to craft. It will tell you what items you need and how many you need. Gather those items, click the "Create" button and voila, you've crafted something.
World of Warcraft is pretty simplistic when it comes to crafting stuff. You can't fail an item and lose your materials, in fact, you never fail at creating an item. However, higher profession skills are needed in order to learn how to craft better items.
