The three Warrior trees are Arms, Protection, and Fury. Since you've said that you want to go Sword/Shield, there are a few obvious things.
Arms: The key talents here are Deflection, Sweeping Strikes, and Sword Specialization.
Protection: The key talents here are Shield Specialization, Anticipation, Toughness, Iron Will, Improved Shield Block, Improved Shield Bash, One-Handed Weapon Specialization, and Shield Discipline.
As for the Fury tree, the only one that I can see as being critical is Cruelty, which is a tier-1 talent, so that can easily be an add-on to whatever you're doing.
Now, note that these are based on my own preferences as to what I go for - I prefer things that are overall benefits, and not things that boost just one ability. So, with that in mind, it seems to me that if you want a Sword/Shield Warrior, you're
probably going to want to go with the Protection tree as your main Talent pool, and dabble a bit in Arms and Protection.
Look over the trees yourself. Look at what the talents do. Figure out
for yourself what sort of things would suit your fighting style.
Cookie cutters be damned. Let your personality guide you, not the self-important declarations of a person with too much time on their hands.
