Maybe I'm just retarded, but i can't seem to figure this out...
Is there anyway to remove secondary skills or can you have more that two secondary skills?
Being the genius that I am I chose cooking and fishing as my two secondary skills and then realized that was a bad idea.
I wanna pick up alchemy and herbalism, but I can't seem to be able to add another or get rid of one.
Any help would be useful. Thanks in advance

Alchemy and Herbalism are Main Professions, you can only have two of those.
Cooking, Fishing and First Aid are all Secondary Profs, I believe you can have all of those.
As far as Alchemy and Herbalism trainers, there are usually one of each in each big city like IronForge, Sturmwind and so on.
Helpful tip to whoever may not know, ask the guards of the major cities, they'll be able to point you to a number of different things, class trainers, bank, inn. All sorts of things. ^^

Yeah, right now alchemy and tailoring and my primary skills.
Cooking and fishing are secondary. I guess I forgot to mention this, but when I go and try to add herbalism the 'train' button is grayed out. The words show up green, meaning that it's available, but I can't click the button.

When you unlearn current professions they are reset to 0 if you want to relearn them, just as a side note

I believe you right-click on the profession you want to unlearn and unlearn it. I may be wrong though.

I understand that you can only have to primary skills and I know how to cancel them.
I'm talking about secondary skills though, according to that link you left me, I should be able to have as many secondary skills as my heard desires.
My problem is that the trainer won't let me add another secondary skill. The trainer has the words in green meaning that it's available (herbalism), but the actual button to train is still grayed out, or unclickable.

That site can be a bit confusing but Mirrasi has got it down, your thinking of secondary as gathering i believe. And that is how the game was originally set before, there were no profession limits so it was only broken into gathering production and misc. But now gathering and production are each sub categorized in to Primary and Secondary. Meaning you can get First Aid, Cooking, AND fishing. Anyone can have these three. However you may only have 2 of the other professions.
To get rid of a primary profession, hit the K button to bring up the appropriate window. Find the profession you want to eliminate and then press the button that looks like a No Entry sign (red circle with a slash). That will nix the profession.
You then have a slot free to start another profession.

Ooooooh. I understand now. Herbalism is a primary skill. Ok, I get it now. Thanks everyone!
