How well do the potions from alchemy stack? Could I drink an Elixir of Lion's Strength and Elixir of Minor Defense to receive both effects perhaps?

Some potions stack, others don't. For example, +defence potins do not stack with +HP potions, but the +defence/+hp potions stack with +stat potions, which are usually part of caster buff lines. For example, +stamina potions are effectively Power Word: Fortitude in a bottle. So, just as PW:F stacks with arcane intellect, +STA pots stack with +INT pots.
