Ok i have another stupid question. I have never played a MMORPG before and am not sure how the servers work. I know you pick one at the beggining that is either PvP or PvE, but can you move to another one later. Like use the PvE to get your levels up and then move to the PvP servers for a while. Or are certains areas on different servers, and the server you are on depends on what area you are in?
All servers have the same areas/version of the game on them.
A server is where you live your entire characters life. It only dictates what kind of play type you want (pvp, pve, rp) and who you play with(and how long you wait in some instances).
You will not miss out on anything due to a different style of play, each server has the exact same basic build as the others.

As far as I know, once you choose a server you live there forever... As for the types, there is little difference 'cept in PvP you can be attacked by any character from the opposing faction, anywhere, anytime; in a PvE server, the only way to be attacked by the other faction is to travel in lands controled by the other faction, walk in a no-mans-land type area, complete FFA, or choose to fight someone in a frendly dual. At this time Blizzard is not offering any form of moving a character from one server to another. They have also not mentioned if they will ever offer it in the future.
So for now take that as a No.

Do you have to turn on PvP when on a PvE server when your on enemy turf, or are you fair game from the moment you set foot there.
Thats even how they put it in the manual on page 132, your fair game....
