I've explored Zaharak (Amal Jaa) and I know there's an NM there, though I'm not sure it's complete as it seemed only like a cubby-hole. In the newest video they showed Natalan (Ixal) and U'ghmarro Mines (Kobolds).

Again I'm not sure if it's the full extent of these open area dungeons or not, but they're present.

Well, let me rephrase cause it's all kinda hazy. I don't know if he was an NM, but he had a unique name and was accompanied by two other Amal Jaa that flanked him. He wasn't too hard to take down with myself and a lancer, but I thought it was strange him just standing there.

Regarding NM's they are in the game, but they're not free roaming as they were in 1.0 or FFXI. They're a part of the fate system so they have to be coaxed out. Nest Commander pops NE of Black Brush I know. I've also encountered Barometz in La Noscea by fighting flytraps out there.

It's an assumption, but if you see a cluster of a specific type of mob and you continuously kill them, it's possible that an NM might pop. A cluster as in a lot of them in an area, not just 4-5 mobs.

except the dungeon you were in wasnt a fate when you saw him right? as for the nms not being free roaming and have to be coaxed out.. isnt that the case in FFXI too?i.e leaping lizzy doesnt spawn if no ones around there killing lizards and then they only hang out in a small area they dont roam teh whole map >.> sooo i dont exactly see the difference

Correct, it was an open dungeon at least for what I saw. Again it may not be the complete dungeon as there are parts that may have been blocked off (invisible wall).

Regarding the NM's that have to be coaxed, there is no difference. But a lot of players are voicing their disdain for not having timed NM's. No more 21-24 hour pops and stuff.

As a MNK from the level 75 cap days of FFXI, I've had my fair share of timed mobs and I'm happy that they're gone but at the same time sad.

Lumbering Lambert
Rampaging Ram
Nue
Deadly Dodo
Morbolger

Don't get me wrong, they're memorable because I went through heck to get them, but I wouldn't recommend them for the casual gamer.

I have mixed feelings about that stuff from XI. It was a grueling journey full of excessive grinding, timesinks, getting defeated by the RNG, etc. However, because of all that nonsense I was kinda proud of my accomplishments in that game. Beating Maat and finally getting to cap was cause for celebration. Getting my belts as a monk was another thing to be proud of. Though I don't think I'd like to go back to that either. Not to that extreme anyway.

I've also fought several NMs in the FATE system... however I was wondering, can rare items be gained by defeating these NMs via the FATE?

I saw it somewhere in the menu setup where you can look at what you have to do to get particular bonuses. If you get all the notorious monsters, however many of them, it's a pretty nice payoff.

I encountered one in a level 15 Levequest in Western Noscea and the game pointed it out to me.

It used to be that Barometz dropped the Crimson Tide LNC arm, but I didn't get it when I killed him. I've fought Cactar Jack quite a few times and he used to drop Fists of the Sixth Sun PUG weapon but again I didn't get any drops when I fought him.

Take that with a grain of salt as I don't know if they've removed them, or that maybe they just haven't been implemented in yet because of it being a beta test.

I remember Wint mentioning in another thread that they may drop some goodies like that in the real game, but it's not there in this current phase of beta. Which then made people wonder how that stuff would get rewarded in FATEs.
