I'm really excited about leveling in new Azeroth and flying around exploring everything. I know I'll enjoy the other changes and relearning my class, but given what I've heard of the upgrades and graphics stuff I think I'll probably spend a few hours just flying around exploring.
The other thing I'm excited about is the new 5 man dungeons. It sounds like they've made them at least somewhat challenging, and I always enjoy learning new fights.

I'm looking forward to the new low-level content. I've run through the old stuff so many times, I'm excited for both new quests and better-designed leveling curves. The new top-level stuff will be exciting and new, but it always is; this is the first time they've redone old stuff, and done it so thoroughly.
I am most excited about the new warrior talents right now. But much more importantly, I am most curious about how raiding, instancing and the mechanics behind WoW will work in Cataclysm and what sort of things we can expect in that area and if Blizzard will be able to improve themselves or if the game will be dumbed down. And as God Emperor of Hunters I am obviously very interested in the developments surrounding the Hunter class.
On a sidenote, is this contest for Europeans as well?

I am interested in developing a case of altitis, as I want to experience old Azeroth again with the redesigned zones and quests. Also, with the changes to the talent trees and the addition of the LFD tool, it should provide for an interesting experience leveling a character from 1-60 again. I am curious what lore elements remain, which have been modified, and what new ones are to be found.
I'm going to roll a gnome Shaman and hide behind my own totems!
Looking forward to exploring all the changes in the old Vanilla zones. I have played them countless times so just finding the changes and enjoying the quests will breath lots of life into the low level experience for me.
I've always preferred 10 man raiding. Kara for example is still one of my all time favorite raids. In Caty 10 man gear is equivalent to 25 man gear. This means I can play with a close group of tight knit friends and not have to scrape just to fill 25 raid spots. I also just find it more pleasant when things are less crowded around bosses. You get to see more going on rather than just bodies and spell effects. :)

The part of Cataclysm I'm most stoked about is definitely the Worgen, not just the character models, but the race itself, the story and the zone. Duskwood is my favourite zone in the current game, Gilneas seems to have a similarly incredible atmosphere.
I am really looking forward to experiencing azeroth in a completely redesigned state having played in "Pre-cata" Azeroth for so long. Taking my Characters back to azeroth to continue leveling will also be a nice experience as ever sinse reaching level 60 i have missed questing and leveling in Azeroth. The two new races are set to be unbelievably epic and can't wait to get my hands on a blood-thristy worgen. the new race/class combinations will make for interesting gameplay also and shall be interesting to try out some of the new combo's in the revamped starting areas.
i'm looking forward to the new races as well as the new race/class combos. i'm so going to roll a worgen druid just to see the differences in the forms from the current ones available. i've already played both Night Elf & Tauren druids so i'll have to roll a Troll druid too
There are a lot of different aspects of Cataclysm that appeal to me: new races, redefined talent trees, new class/race combos, the ability to fly around the Old World. But I think what most excites me, as someone who will have at least 4 level 80s by the time the expansion hits, is the new leveling experience from 1-60. I want to revisit the same sense of wonder that first attracted me to WoW, and enjoy exploring the cataclysmic zone changes with my new toons rather than just do flyovers with my existing ones.
I'm hugely excited about the new questlines, particularly in the lowbie content. As much as I enjoy raiding and other social aspects of the game, I get all kinds of giddy when I get to experience a story-advancing questline. I watched the Wrathgate sequence 3 times in a row the first time, I was so blown away. And then I found out I wasn't done! Don't ask my guildies what happened when we downed LK, as a side note. I absolutely did not squeal like a girl and anyone who tells you differently is a dirty liar.
I've actually sworn myself off of further spoilers so I can experience everything in the intended order. After the first couple times someone dropped a massive spoiler (*coughYOUAREDISSMISSEDcough*) and only later did the story leading up to it drop, I ended up feeling very disappointed. I'm going to roll a forsaken and watch as the awesome unfolds, let me tell you. I have *got* to see what's up w/ this Voss girl, by the way. I read one reference before taking my spoiler fast, and now I'm super curious.
When the game first came out, the lore was almost more of a treat for fans of the RTS games than it was a way to move the story forward. I would say that mentality persisted largely unchanged until the launch of BC, when the designers started to consider the game a continuation of the Warcraft universe, rather than "the MMO set inside a game of WC3." Now that the floodgates have opened, though, it's awesome to see Blizzard sweep away the proto-storylines of vanilla and replace them with real plot advancement.
I'm pretty interested in the talent tree override in unison with the gear stat override. Trying to keep track of your caps and useful stats was always a pain, I'm interested to see how well the special sub-talents in the trees will work and if you actually gain for instance defense rating with the talent tree, or just a reduction in critability and whatnot. I'm especially fancied by the shaman and hunters sharing the same gear again, as with the hunter's Focus, the shaman are supposedly getting bonuses to mana and spells through talents using the same gear in their talents. Overall, though, I'm most anxious to see how they're changing tanking. With WotLK, paladins became overpowered in tanking and overpopulated on all sides. I'm looking forward to warriors and druids getting the spotlight again in Cataclysm if the changes go according to plan. The system optimization (at least what I can tell through screen shots and stuff) look really appealing. Let's hope they really make Cataclysm challenging and fun :D
Seeing a new Azeroth. I loved this game, but I can practically quote most of the decent quests from 1 to 60, a decent number of the ones after that. I'm really looking forward to that experience being fresh to me again!
One word... Deadmines. I don't know why, but I'm most excited about this. All the other stuff is going to be really neat and a whole lot of fun to play through, but I can't wait to play the new Deadmines. Maybe it's because it was my first dungeon experience in the game, or maybe it's because the thought of an old 5-man dungeon being remade is pretty awesome. Not sure. But I can tell you right now, I'm super excited about it.
That being said, being able to fly over the main cities is going to be pretty awesome too! Even though certain events are going to change the landscape of said cities, it will be pretty sweet to get a birds eye view of the cities we've only been able to run through up until now.
I am looking forward to testing out the Goblin and Worgen starting areas of course. In addition I want to have a level 80 paladin and hunter either as premade or copies of my current ones. These two classes seem like they are changing a lot and I would like to see how the changes work provide feedback on the good and bad. I feel I can do this very well for the hunter class especially since I have played one from day one and know all three specs pretty well.
I've always wanted to reroll as a warrior. I tried in BC but just couldn't get into the old questlines, having done them so many times. Now, I'm going to have a new race (worgen) and a whole new azeroth to explore.
Heroic versions of old dungeons, new raid content,etc. You're asking what we're looking foward to the most? It's everything. They took most of our suggestions and rolled them all into one big package. Can't wait.

I got a lot of chars in some servers, in Horde and Ally sides,and the videos and screens shots they are showing in internet about cataclysm are epic ..
I need to try the new Hunter Priest and the epic Tauren Pala omg gonna be awsomme.. About the worgens i need to see whit my own eyes the transformation and skinning .. About the goblins a portable action house and the things more cheap .. buyaaa .. nice .. and the mount a car ? ohoho EPIC .. And the flying mounts in Azeroth .. pretty good .. no more time wasted to do for the alliance and Horde .. :P
In all honesty there is not one specific thing I am excited about for this expansion. The expansion it self is going to offer all players something new and exciting to dive into.
Role players have two new chunks of lore to jump into from the Worgen and Goblin sides. Brand knew regions will allow those who explore or are industrial to go forth and mine, fish, forge, etc... etc..., in brand knew areas.
New regions surely means multiple quest lines will open up to all players that will bring you closer to the lore of the two new factions!
So I cant say I'm excited to just play as a Goblin. But to experience everything else that Blizzard has tied into it.
