I have looked everywhere to see if I can find a way in which you can block/remove/ban someone from using the guild officers channel but cannot find a way. Anyone know? Or is it a case of recreating the channel?

you can kick them, but can't ban them.

why not just change the password?

When in doubt, Google it!

Guide to EQ Chat Channel Commands

The 2 main commands it sounds like you are looking for are:

/chat kick <player> <channel> Kicks someone out of chat channel.

/chat password <password> <channel> Sets a password for a particular channel.

How can someone not a guild officer use your chat channel?
Just curious.
Did you consider deguilding?

There's a (game supported) officer chat channel? Or is it just one you set up yourselves? If someone who is not an officer is using or trying to use it, I would say a stern warning is in order.

I'd assume it wasnt someone logging in to it on their main char..
