I recently lvled my engineering enough to choose between gnomish and goblin engineering, and my guildmates advised me to choose goblin, which I did. Now I have seen the craftables on atlasloot showing me which creates what, and am regretting my choice considerably. I have only lvled the skill to 210.
My question is, is there a way that I can drop goblin engineering (obviously losing all the goblin schematics and such) and pick up gnomish without dropping and releveling engineering from scratch?

I dont know what's wrong with you....I love Goblin engineering. Anyways the only way to do it is to restart engineering from lvl 1. Just curios what catches your eye in Gnomish? Personally I don't even care anymore which one i am cause at 450 nothing either makes is significant. Anyways that is just my 2 cents.

Dont know your race/class combo so a bit difficult to give input on which is best for you but...
Goblin is fantastic for dealing damage - its a combat supplement and lets you kill stuff faster and harder.
Gnome is an enhancement buff - it doesn't have much in the way of DPS but has a lot of utility items (or fun but useless toys depending on your class).
As a side note, if memory serves, you can't get the engineering pet if you switch types, so if you want to switch to get the mini-harvestor bot instead of the walking bomb, you're wasting your time (plus pet bomb is kewler imo).
