Do you use a gathering add-on?
I was faced with that inevitable choice. With the birth of 4.1 all my UI's went out of date, and the main one that I use (LUI) is coo-coo for cooco puffs. So I've started building mine from scratch again. 4 years playing I've done this countless times, and sometimes it's nice to have a change.
ANYWAY, I've always used Gatherer and as I'm in a phase change I'd thought I would ask.
What do you use and why?

For gathering (although I rarely do that anymore) I really like Carbonite. In fact it's really the only thing I use Carbonite for because it's such a memory hog. It has the ability to set up waypoints and an arrow directing you to all the different nodes for herbing and mining. It makes gathering a lot faster.
I use Carbonite as well. It is great for questing and waypoints. For Gathering, you can right click on the carbonite minimap (I choose to show both blizzard's and Carbonite's minimaps side by side, rather than merge them), and click Show and select herbs and minerals. Then right click and say route to current nodes. I position my waypoint arrow by the minimap and simply follow the arrow as I fly along. The result looks like this:
