Any class but druid (which gnomes can't be) goes well with engineering.

As for goblin vs gnome -

Goblin - dps oriented, bombs, mines, rocket launchers, etc - helps you kill

Gnome - fun, toys and personal buff oriented stuff - not combat oriented

rustle has it right , it is your choice as to which you decide on , i have not decided yet on my alt which is better for me but you can leave that for when you get close to end game or when you get stuck with leveling engineering , i guess as you intend to be on a PvP realm then Goblin is the real choice but of course you cannot get that until mid levels anyway .

I think it is one of the most fun trades to level with but of course is not great for profits and even without picking one of the specialities you will find it fun as many items do stun the enemy so will be very useful to you but i guess you already knew that.

Well, let's expand the classes a bit (the below are all opinions so don't spaz if you play an engineer in a class I said didn't compliment the skill - just calmly explain why its a good skill for that class) -

Druid - wouldn't suggest engineering since you can't use the toys in bear/cat/travel forms - not sure about tree/moon

Hunter - good class as the bombs and mines compliment the traps

Mage - mage can do just about everything out of engineering with spells - seems like a waste to me

Paladin - I've got a ret pally engineer and it really helps a lot (this was before they got boosted) - still, the explosives compliment short range combat while the other stuff gives the pally ranged pulling power

Priest - never played one

Rogue - never played one (GF's rogue has engineering though and she loves it)

Shaman - never played one

Warlock - I've got a demo spec lock and personally, I can't see much utility to taking engineering

Warrior - never played one
