What are some profitble fish. And what lvl do you need to catch them. just wondering

Check the trade skills sticky for more info on fishing and levels. But, to quote the sticky, here are fish that seem to profitable for alchemy in particular:

With the release of the expansion the profitability of Azeroth fishing may have changed. I've not tried to sell any alchemy fish or deviates so can't speak from experience, perhaps others can comment.

For Outlands fishing, you may be able to make profit with a number of new fish types. Below is a list of the cooked fish now in game:

Blackened Sporefish (+20 Stamina, +8 Mana/5 seconds)
Feltail Delight (+20 Stamina, +20 Spirit)
Golden Fish Sticks (+44 Healing, +20 Spirit)
Grilled Mudfish (+20 Agility, +20 Spirit)
Poached Bluefish (+23 Spell Damage, +23 Spirit)
Spicy Crawdad (+30 Stamina, +20 Spirit)

These have strong appeal to a number of classes, especially if people are running Heroic mode instances or raiding. You can also try to sell the uncooked fish to appeal to people that are levelling up cooking.

Jasmine already listed the money fish (for Azeroth), so I'll concentrate on the second part. Today I went to Menethil Harbor with a toon that had a skill level of 75 fishing. I didn't use any lures, and caught 4 Oily blackmouth and a stranglekelp out of a fishing node. There were lots of "Your fish got away!" messages, indicating that I was on the raw edge of acceptable. Since you can also find Firefin snapper there, I'd say that 75 skill should be good enough to get you money fish (with less messages if you use a lure). This ame toon got from 50 to 75 in Darkshore, and hardly ever got those messages - there are Oily Blackmouth there, too.

When you fish the Barrens, 75 seems like it would also be the lowest useable skill necessary. However, in The barrens, you should also be aware that the oases that contain deviate fish are not the place for a level 5 too with 75 skill in fishing to go to. There are just too many L10-17 critter around them that will want to make lunch of a lowbie, but you could probably be able to fish them as a level 13 or so. Blackmouth pools are occasionally found at Ratchet, and those are safe for any level.

I don't recommend fishing from the dock in Menethil. Move over to the bank and keep an eye out for the coral sharks. I had one eat me, while I was on the dock yesterday. He then proceeded to chase a passing dwarf on down the dock until he hit dry land. Might be a glitch, a friend was having troubles in outland with underground mobs attacking his pet as well, but better safe than sharkbait like I would up being. ;_;

Oh, I was still getting frequent "got away" messages until I hit 190 there, if you do some googling, you can find a combination fishing & cooking skillup guide. Handy if you intend to use the toon for more than just fishing.

Not really. You can find Stonescale Eels in Tanaris, Feralas, The Hinterlands, or Azhara. Your skill should be at least 225, and you should use lures.
