I can't get to Hellfire yet, so I can't look for my self. Possibly before 60 since you can get in at 58?
Have to be 58 to get to new area where the trainers are to uncap crafts from 300. My shaman is lvl 50, and I have 300 skinning, and 398 leatherworking ._. Got to get 8 more lvls ><

and fishing too, but I don't think you'll be able to get many skillups in Azeroth. Maybe in Azshara and ZG, the two highest lvl fishing zones.

You can skill up to 375 in any zone as long as you consistently catch something. Zone level doesn't matter. It's just the number of catches.
