Mining comes with the Smelting ability that turns your ore into bars. Blacksmithing just lets you take the refined bars and turn them into armor and weapons.

Also, engineering, blacksmithing, and mining are all primary tradeskills so you can learn 2 of them at one time. On the other hand, first aid, cooking, and fishing are secondary (support) tradeskills and you can learn all 3 in addition to your primary tradeskills.

You can only take two (2) main tradeskills. You cannot continue on to three. Five is right out.

So, if you want to make the holy hand grenade, choose engineering and its gathering skill, mining. Mining is also the gathering skill for blacksmithing and Jewelcrafting, but you can't do those if you choose Engineering/Mining.

If this is your first character, I would not suggest Engineering as a skill. It's better to have two gathering professions to make a bit of money. Crafting professions tend to be money losers, unless you find a niche product with repeat buyers.

I strongly suggest herbalism and skinning. I recently started on a new server for making some horde toons and came up with over 3 gold in just a casual 45 minutes of walking around the starting zone, gathering herbs, and then selling them on the auction house. Also Fishing is very profitable in many ways
