Ok I started really late as a 52 warlock having 280 engineering and mining dropped it to do herb/alchemy.
Herbalism is already maxed getting there with potion making.
Researching the forums for recipes and trade skills there seems to be a descrepency.
Potion making can be trained to 300 max.
There is no quests listed for alchemy other then the lowbie one in darnassus.
Recipes for flasks and the alchemist stone, listed at unlearnable until skill varies 305-315?
So then, how is it possible, something has to be missing here.

You can get items and enchantments that increase various skills, albeit that I havnt looked personally (300 Alch/Herb myself) I am sure you could get gear to push the skill to 315.

Those enchants I believe, although I could be wrong, change your stat within a cap they will not change the max cap.
For example
I can use a nightcrawler grubb on my fishing pole at 100/150
This increases my stats to 150/150
But if I already have 150/150 it does no change.
The fishing example is fact I know for sure. Unsure about the enchants, but that seems like I'll need 2 sets of gloves ones for brewing and ones for out in the feild.

You would be wrong.
Example:
My fishing is at 300 (capped). I cannot fish with just a normal pole in far north Feralas. Then I pull out my Heavy Iron (+20) fishing pole... still told I don't have enough skill. Toss on an Aquadynamic lure and voila! I'm fishing. This area would appear to have a 400+ skill requirement for fishing.
However, there are no recipes, plans or formulas in game yet that require > 300 skill to use yet. I think this is a mistake, considering that there is a place where you need more than 300 fishing already in place.
