What level (if any is required) can i start skinning and leatherworking and is there anywhere before Ironforge that i can train them both?
Level 5 and Ironforge is the only place that I know of . Both the skinning and leatherworking is taught there. Just ask the guard for the location of the trainer. It is a stairway on the north of the great forge.
South of Northshire abby, and North of Goldshire there is a house on the side of the road where you can pick up Leatherworking/Skinning. And right outside the door, you can pick up fishing.
whenever you hit a new area, ask the guards for directions to some things. once you do, it will flag it on your map.
like sterlingedge said, there's a lady near goldshire who can show you. i started at around lvl 9 or 10..i could have tried it as soon as i hit goldshire seeing as there are so many beasts around. but on the other hand, you'll be killing many more beasts so you're really not behind, either.
not to mention, when you hit goldshire the first time, you might not have extra bags for inventory.
