On a single character you can have exactly one craft up to 100 (actually two if you count fishing too). You can have all crafts up to 60 if you want to. After that you only have 40 remaining skill points. These points can be distributed completely to your liking on all crafts, so you can have one to 100 and all other to 60, or you can have two to 80 and all other to 60 or you can have say craft levels 70, 80, 65, 65 and all others to 60 (you get the picture). As soon as however as you have used up all 40 points and you skill up on one craft over 60, another craft over 60 will drop the same amount, so you actually are delevelling.
As I said, fishing is separate from this. You can have fishing up to 100 and another craft to 100 (or any combination yielding 40 skill points). The same can be said about chocobo digging (although it is rather hard to know exactly what level your digging is).
This is the reason why a lot of players work with crafting mules. I have a mule in Bastok doing Alchemy, Goldsmithing and Smithing, a mule in San d'Oria doing Woodworking and Leathercraft and my main is doing cooking, bonecraft and fishing. Haven't started on Clothcraft yet, but I have a mule in Windurst as well if (and when) I ever feel the need to take that craft up.
