What would you choose if you are a WHM or a BLM? Maybe even SMN? What would you use from about lvl 10ish to about 40ish, I would like to see some inputs on why you would use that specific set of clubs or staves.

For my blm I used a club from first level to now, since I liked most of the +int and +mind that clubs gave to my stats. Currently I have a solid wand (+5 int, +5 mnd) that gives my +int a nice little boost (I'm a 37 blm). I use my clubs for my whm also, since my whm is just "growing" into basically the same gear for my blm.

I used wands all the time with my whm at low levels, mostly so I could use a shield at the same time, but being more experienced now and looking back on it, I probably should have used a staff with the highest +mp I could get, since I'm elvaan. Elvaans have high mnd to begin with, so we don't really need wands, and our defense is high enough to let us take a few hits without dropping into the orange so having a shield isn't that big a deal unless it has some stat bonus you want. (besides, whms shouldn't be getting hit at all in the first place.) As for blm I think I'm going to start using wands, even though I could use the mp...Elvaan int kind of sucks and int is more important to blm than mnd is to whm. For summoner, go staff all the way. Int and mnd are only important depending on what you're subbing, but mp is really a smn's "main" stat.
Now, if you were a taru, I'd probably use wands instead of staves for whm, since tarus have mad mp and low mnd. Same for blm, though their int is higher than their mnd to begin with -- again, their natural mp usually makes up for it. So it kind of depends on what race you are.
Of course, when you hit 51, it all becomes moot -- elemental staves are truly the way to go.

Up until I got my ice/dark staves, I used wands exclusively in XP parties (though I do keep my rose wand +1 for wind based spells.) I always had the wand with the highest +INT/+MND available to me. I also kept the most damaging staff around for solo farming purposes. I didn't care about any stats on that staff except damage and delay so I could save as much MP while farming as possible and farm forever.

As such, my staff skill is roughly twice my club skill. But I can hit EP's for 70 damage and 150 on crits. Add a spell to that damage and you can farm for some time.

So... use both!

As a low lvl whm I used mostly clubs with +INT/MND and a shield. At 51 the elemental staves are a must IMO. I use a dark and light staff for xp parties, but for general farming, cracking skulls, etc.. I use club. My club skill is 175 ( just learned True Strike ^^). If you are a Whm club will be more useful for solo at higher levels, mainly 66 when you can learn Hexa Strike =O. Although, I don't know too many whm's that melee when partying.. I used to before I got light staff so now I'm off on key hunts / skill up parties to keep my skill up to par.
