Southerners don't have much use for sheep in general. Wool competes with cotton, sharp little hooves are bad for the topsoil, and mutton isn't part of the regional cuisine. Probably isn't good with a brown sugar glaze, or something.

Mixed with brown sugar, ginger, tarragon, cinnamon, pepper, garlic powder, and salt it's fine.

I'm a bit surprised that lamb is considered to be rare. I don't eat it like every single day or anything, but it's not that uncommon.

It is stupid over-priced considering how many zillions of sheep are raised in the US. Montana alone has a TON.

Well, it's overpriced because there isn't much of a market for it. Though I guess there was probably a small bump in sales after The Avengers movie. It's really not a part of American cuisine culture like cows and pigs, and more of a special occasion food.

If you ate more, they would raise and sell more and then it would be cheaper! Start being part of the solution instead of part of the problem. Or move somewhere with a lot of Greeks, it's probably cheaper in their part of town.

Nah. Probably why it's more expensive in the store. They buy it all up to sell in their restaurants. It's not like a Gyro is expensive relative to a hamburger (and the amount of meat in both). Although.... the Swedish/Persian bakery down the street does charge an extra buck for lamb kabobs compared to beef or chicken, so who knows? Oh. And they make an amazing meatball sandwich! Beets? Who knew?

You see it cheaper in the ethnic neighborhoods because people are actually buying it and rotating the stock and the merchants have leverage to get better pricing since they're frequent customers of the wholesalers.

The street taco vendors in Tijuana use the exact same vertical rotisserie that gyros are cooked on (and Shawarma for that matter). I'm not actually clear on the precise type of meat being cooked though, but damn is it good after a bunch of margaritas. Smiley: tongue
