Creative eggplantingFollow

I forgot:

I made Alton Browns eggplant last weekend. the second one he does in the video with the slices covered in sauce and broiled. They came out looking just like Altons, but I really didn't like them. The sauce sucked! My husband agreed. So, they might be better using just a good bbq sauce.

The biggest challenges of gardening are using up all your veggies...

To that end, this weekend I made a spinach casserole, which I was informed wasn't a casserole but a souffle (think spinach quiche without the crust). It got the thumbs up from the husband (he's such critic).

I've only made his French Onion Soup, but I really didn't like it much at all. I liked his show for the science and beginner's techniques.

That said, the sauce for the eggplant steaks sounds... gross.

Eggplant steak sounds as gross and fake as vegan lasagna.

I don't mind eggplant in general. I've definitely had eggplant I thought was disgusting, but I've had delicious eggplant, too.

Oh tartare, steak can be fire-free.

But, yeah, there was no passing those eggplant disks off as a main course.

Eggplant shrinks so much while cooking that the amount you need for a main course is so large to begin with.

The best way to do eggplant is to grill it. Toss it with a little olive oil salt and pepper and throw it on the bbq.
