Happy Pancake Day!Follow

To celebrate my ongoing success with sacrificing belief in Catholic Ritual for Lent in 1985 I will be making pancakes for the family for Shrove Tuesday (today). While as with most things, I likely already make better pancakes than you do, I like to have a variety of selections for my "this is boring" daughter. Does anyone have any interesting pancake recipes?

Not super interesting, but it's buttermilk pancakes without the buttermilk. That's what the vinegar is for. I like them.

1.5 c milk
2 eggs
3 tsp vinegar
3 Tbsp oil
1.5 c flour
1.5 tsp bkg pwd
.75 tsp bkg soda

I like taking bacon and frying it into the pancakes. Pour the pancake, and then put bacon on top of it, pretty straight forward.

My father always made a variation on latkes - add some mashed potatoes to the pancake batter. (Or mashed potato flakes and a bit of extra water if you're lazy.) It makes them starchier and more substantial, and works well if you want a more savory experience with butter and bacon.

I would make these, but it's been my experience that upon seeing me dropping anything into a liter of hot oil, Nexa says "What are you doing? Really? Are you really making fried dough? Why don't you just put on a red and white striped shirt and a fucking white paper hat and take this act to the fairground. Hannah! Hannah! Come look! There's a Carny in our house!"

Last time she started playing a calliope.

Peel and core an apple. Slice it so you have apple rings. Give the rings a decent coating of cinnamon (soft apple works best). Then make silver-dollar sized pancakes. Add an apple slice right after you drop the batter. you might need to add a little more batter to cover the apple. Then cook as you would any pancake. Serve with syrup or just cinnamon and sugar or even chopped walnuts.

Shaped pancakes are pretty easy - and fun. Drop little shapes, face pieces or squiggles or whatever onto grill then cover with regular pancake batter. The shapes will show up when you flip the cake. You can also make heart shaped, or mickey mouse head pancakes pretty easily (in case someone needs a quick valentine there is always some sort of food you can make into a heart shape).

Blue berry pancakes are the best but they're only the best with little maine blueberries - hard to find out of season.

Other berries I'd not add to the pancake batter but make a compote (really easy to do with a microwave), serve it warm over the top with whipped cream or clotted creme and powdered sugar.

My favorite is pigs in a blanket (pancake wrapped link sausage), my kids liked chocolate chip cakes the best. You can arrange the chocolate chips into designs as well.

To liven up the boring pancake batter add a couple drops of almond extract. I used to make pecan waffles frequently, but never pecan pancakes. I don't know why.

Little Black Sambo ate 169 pancakes because he was so hungry.

Once a long time ago I worked at Perkins Pancake house. We served Swedish pancakes with lingonberries, Potato pancakes with applesauce and Buckwheat pancakes with LOTS of syrup.

It isn't pancakes, but we've found that using a waffle iron to cook cinnamon rolls makes for a rather interesting waffle. I'd bet that if you do something similar with a couple hot metal pans or a pannini press, you'll likely get something approaching a rather interesting pancake.

I've always liked dipping bacon in my left over maple syrup. While not technically a recipe, or even something I've tried, I do wonder if crumbled bacon pieces would be a suitable pancake topping. Maybe a weekend experiment is in order.

Call me boring but Gingerbread pancakes/waffles are a staple in my house and so are pumpkin pancakes/breads.

A plethora of recipes exist so should be easy to find and adapt.

Funny how we notice things we didn't know about before. I had never heard of lingonberries until 2 days ago when a friend of mine served up a batch of lingonberry mead he'd made (it was ridiculously good btw!). I asked "what the hell is a lingonberry?", cause that's what you do when you've never heard of something before. Now I see you mention the same thing but you're 2 days too late cause I know what they are now. Smiley: tongue

I had never heard of lingonberries

This made no sense to me initially, as there's an Ikea every 7 or 8 feet in southern California. Then, I remembered that Ikea didn't open in the US until the mid 80's and correlating that with the odd temporal warp you seem to be stuck in led me to believe it is actually 1983 in your world.
