I'll just say that throughout childhood and even now I will take two pieces of bread, a slice of cheese, and nuke it for 30-40 seconds til the cheese is melted.
It's not a grilled cheese sandwich, but I always liked the texture and flavor. Sometimes I'd take the results and roll it into a ball and have a little dense doughy cheesy melted thing.

Typically your piece of beef on the grill, whether it be burger or steak, should only be flipped one time. The more you flip it the dryer it'll get.

I have an electric griddle that gets to live on the counter. Makes grilled cheesers a breeze. I like my grilled cheese sandwich pure with no adds - only garnished with a little mound of ketchup on the side.
I've never heard of a toasted cheese sandwich - what's up with that?

I make my grilled cheese sandwiches on a Forman. Three minutes from assembly to dinner. Though I still cook my tomato soup on the stove. And I mean real tomato soup that I grew, juiced, and canned myself. None of that store bought from concentrate crap that never has enough acidity in it.

If using bread that is anything better than wonderbread crap, I recommend you cook the grilled cheese in your pan/griddle and then stick it in the oven on broil for about two minutes, flip and repeat. It gives the bread a wonderful crunch and golden color. It also works a lot better with clarified butter. It's super easy to make your own and you can melt a little bit and use a sauce brush to spread it on the slices of bread.
I recommend a combination of gouda, muenster, and gruyere. Very thinly sliced tomato adds a ridiculous amount of character to the sanguich.
Sourdough is best imo.
