Last week I made my first attempt at home brew.

After boiling the wort and placing it in the carboy I put it in the basement to ferment for a week. Then I decided it was time to go play some EQ upstairs after I cleaned everything. (I own a cap cod style home…well my bank does I mean)

After about 2 hours in the game I hear and BOOM! (Being up stairs this was quite loud for me to be able to hear it)

I run downstairs to find that the top valve had blown off the carboy and spread hops and barley all over the ceiling. After cleaning it up I go back to playing EQ again and after about an hour later BOOM! it happens again. I decide after cleaning it up the second time to leave the top off for the night.

After checking things out online I find that this can happen if it ferments too vigorously and found out a way to prevent it from happening again by using a 1 inch hose and a bucket of water.

Yesterday was bottling day and the beer smells great! Now I have to wait four weeks to sample the fruits of my labor so to speak.

I’m hoping that by leaving the top off the carboy the first night I didn’t ***** it up. It smelled good yesterday so I think its ok but only time will tell…

So anyone else here ever brew any beer at home?

Home brew is for tight bastards, or alcoholics that don't want the local store owner to know exactly how much booze they go through. Which are you?

Actually neither. I like to support my local party store owner... Baboo is his name.(Buy a fifth of Beefeater from him a week approx.) And I'm far from tight.

Just something I always wanted to try and Santa made it possiable this year.

I'm sure there are things I've left in my room that are fermenting into some sort of alcohol as we speak.

I got one of those Mr. Brew or whatever beermaking kits from my parents for Christmas. I had a roommate who once tried the same thing, it came out really stank but he probably did something wrong. I haven't tried mine yet since I didn't want to take it home on the train...

Had some friends who brewed there own elderberry wine.

Tasted like **** but it was about 120 proof.

I actually like to brew MEAD, which for those that dont know is honey and water, plus your basics.

From memory, not looking now, honey is 12 or 14% water and when it reaches 21% and over it ferments.
A good fermentation can take years, but I like to make them around 6 to 10 months.
I like using strawberry clover honey, mmmmmm.
I have also made sparkling mead by adding a spoon of sugar on bottling (probably broke every rule in doing so, but there you go)
Being in Australia, the most common types of honey are eucyliptus honey, but I dont like it much.

Ohhh almost forgot, the current mead I have brewing now, is 3 years and 4 months old, thought I would try a long one this time, and I must say, most favourite time in the whole process, is removing the lid on the brewing barrel, I love that smell.
