I think you're just mistaken. Lemons have way more sugar in them than limes. A bet it's an association problem.

I find limes to be sweeter if I'm just sucking on some pulp or something, but lemons are far more sour and probably block my ability to taste the sweetness.

Once diluted, though, lemons definitely taste sweeter to me.

I don't eat them alone, so my main comparison is in water. And I'd definitely say lime water is sweeter than lemon water. At least to me.

Some google searching suggests that it's fairly common opinion that limes are sweeter. Granted, I wasn't looking anywhere nearly long enough to see if that was widely the case.

Though there's also a lot of mentions of sweet limes and sour limes. And I've never once seen anything but "limes" in groceries, so who knows what the hell they're talking about.

I'd assume that limes are less acidic, which allows any sweetness to shine through. This study I found suggests that to be a fairly good assumption, though the differences seem small.

Regardless of which is more sour or sweet, if you want something sour in your beer you can just buy a lambic. No need to add any citrus fruits.

That's the other end of the spectrum though. Lambics are so sour they have to add sweet fruit to temper the flavor. Smiley: smile

Gueze doesn't have any fruit and those are lambics as well.


And Hanssens' Artisinaal Oude Kriek does have cherries but it's still the most sour beer I've ever had.

I've never actually tried a Gueze but I know they're a composite of old and new unsweetened Lambics. I'm not a huge fan of styles that use wild fermentation so I tend to stay away from Lambics and other predominantly sour beers.

Just try a Cantillon Gueze 100% Lambic or 3 Fonteinen Oude Gueze, it's virtually impossible not to love those. And where Krieks tend to have a more vinegar-y sort of sour, gueze has a sour more akin to green apples and lemon. Belgian sours tend to be much more sour than the American ones I've tried though, at least fresh, the Jolly Pumpkin beers I've had were definitely better with a little aging.

I've made a note to look for those next time I'm somewhere that would have them. I don't dislike sours, it's just that none of the ones I've tried have gotten me excited enough to keep pursuing.
