Pold, you could always try some huevos rancheros. Or crepes. Or a breakfast casserole.
I'll have to look into the casserole idea. Crepes would never work with their pans(or mine, for that matter). And, of course, we could always make the rancheros.

Are you married to the idea of this being "breakfast"
I'm not, the folks are. For me, this is my final meal of the day, so I could probably eat anything.

Cause with brunch, you could look at various soups with bread/toast/whatever.
The only soup I've ever gotten them to consider for breakfast is posole, and I really don't like how long it takes to cook it.

From my breakfast casserole search that I started before completing this post:
This sounds like bread pudding to me.
This sounds awesome, but would be instantly vetoed by my dad, who hates bananas.
I think I can sell them on this one.
This one might also be pretty great.

Diced up hasbrowns, mixed with some sauteed onions/mushrooms/tomotaoes with diced up ham and sausage covered with 2 bacon strips and 2 eggs, however you like them. Toss in some newfie steak if you're really hungry.

My mother-in-law makes an egg bake. I suppose it could be called a casserole. It starts with spreading those pillsbury crescents that pop out of a cardboard can along the bottom of a cake pan. Then theres a layer of grounnd sausage and then scrambled eggs, then cheese and cream of mushroom soup and i think more egg mixture poured over it and baked.

It's not my cup of tea but my kids really liked it.

I liked the crepe suggestion - filled with nutella and bananas and sprinkled with some cinnamon and nutmeg. Smiley: drool

(did you know you can catch a buzz from nutmeg?)

I once came home to find my roommates on the porch smoking some nutmeg.

Having actually made one once, I can tell you that it takes far too much effort and gives me far too much heartburn.

Nah, that part wasn't too bad. Disposable pans are your friend. Oh, and looking through my old pics, I remember that we made a couple adjustments, turning it into a Bacon Explosion Wellington. It was one of the recipe ingredients, however, that gave me the heartburn.

Overlooked, most assuredly. Busy trying to get everything tidied up at the desk so I can go home in 15-20mins.

Normally I go for Eggs Mexicana. Scrambled eggs, Jalapeños, Onions, Tomato's all mixed together. With Hot sauce and corn or flower tortilla's Along with refried beans on the side, and potatoes. Rancheros are also great for breakfast.

Congrats Poldaran. I can't be much help with breakfast recipes as I very rarely eat traditional breakfast foods. Since I enjoy fruit, I've found a simple bowl of oatmeal overloaded with fruit to be very pleasant. It's simple enough to do a theme (berries, melons, etc.)

Glamorgan Sausages (hint: there's no sausage)
