I usually only put plain yellow mustard on my brats.

I'm not a fan of sauerkraut. Never really liked it growing up, and as an adult while I don't mind the taste, since I never ate it growing up, I don't really enjoy eating it now. It's not that I think it tastes bad, it's just not part of my normal food stuffs.

Had Polish sausage tonight with hot dogs. The Polish are always too large to eat two so one sausage + one dog hits the sweet spot.

Last night we tried gyro brats. Delicious. I love my butcher shop.

Considering brats are from where I grew up? Most of us ate sauerkraut either on or with our brats. I also like spicy mustard on mine.
I actually knew the owners of the Johnsonville brat company. My mom was good friends with them and my siblings and I went to school
with their kids. Johnsonville is located in Sheboygan county a few miles away from Sheboygan itself and in-between Elkart lake.

I've been on a polish kick lately (if my obsession with Chicago food wasn't obvious, I worked in Chicago style restaurant in my teens). I've been buying different brands around town, cutting them in half and charring them in oil with different toppings. My favorite so far was some sharp white cheddar with grilled onions, proper nuclear green relish, celery salt and giardiniera. The Vienna Beef brand are the best I've sampled for now. I also got a home meat slicer and made my own beef and juice to make combo beefs. The roast turned out good, but the juice was not strong in the flavor. It was good but needs a LOT of improvement.

As for brats, I will take them with any and all combination of things you described in the OP. One thing I recommend you try next time you make them is to put some vidalia onion (available in Spring) or other sweet onion, some jalapeno mustard, and crumbled gorgonzola on your brat. The combination is ridiculously good, especially if you give the cheese a few to get the proper creamy texture from the heat of the meat. Also, brats should always be grilled or URDOINITRONG.

On sauerkraut: Zuurkoolstamppot. Just don't skip the smoked sausage like the recipe does, that's the best part (you can just add it to the mash while it's cooking to get it hot). Also add some gravy for perfection. Then drink a nice German Weizenbock with it for probably the greatest winter meal ever invented.

Everything on it. Sauerkraut, mustard, grilled onions, grilled mushrooms, whatever. I love me some bratwurst. Joph is going to shake his head yet again when he reads that I've even sliced bratwurst and put it in my ramen. The sodium level is insane doing that so I tend to drink a gallon of water after eating that.

Sounds good, it just scared me a little...

not a step you see in every recipe.

Really anything with some kind of salty meat, sauerkraut and a starch would get me hungry. Speaking of which, it's lunch time. Smiley: wink

There's not much bacon compared to the amount of sauerkraut and potatoes. It's still not diet material of course but it's great winter food when you need that bit extra to ward off the snow and ice. Smiley: tongue

Smiley: lol I typically do that. Beaten egg with an assortment of veggies (usually broccoli, mushroom, snap peas and bean sprouts) and sliced ham/pork. But if there's a brat in the fridge, I'll add that in.
