Surprised no one mentioned Naruto.. not out in US yet, but you can download it from animesuki.com. Not technically illegal either since its not licensed here.
Full Metal Alchemist was good too, but some company just licensed it, so its harder to find now..

Another vote for Cowboy BeBop. It's my all-time favorite.
Also, don't forget that there is a set of Kenshin movies that are indepedent of the series: SamuraiX Trust/Betrayal -- shows how Kenshin became who he is. Much bloodier than the series, but very cool.

I hesitate on this one, but I have to admit I love Fruits Basket. Yes, it's as girly as it sounds, but very funny with a good story.

True, Bebop is easily on of the best animes in recent years. I still adore *******! and curse the fact that they cut it off after only one volume.
I don't get the hype surrounding Naruto lately though. It's not that great.
Going back in years, Ranma 1/2 seems to have stood the test of time fairly well and is still good for a laugh.

You really need to see the OVA's of Kenshin. They are so sweet. Makes the series look like Hamtaro. If you like trigun, bebop,...you should check out Outlaw star and Ghost in the Shell is a very good movie there also coming out with a follow up to it and a video game.
