You've made it to this point somehow so I'm betting you'll know what's best for you when the time comes. Personally, if I can count on shadows and the shadows of cotanks, I'd use sushi for more atonements. If you don't have much faith in your blink tanking, and really you should by now, hp or def foods can help a little with safety but not as much as sushi will by helping you kill the mob faster outright. Byakko is one where I would use defense foods since his rampant triple attacking will run your timers beyond their limits, but cotanks make it much easier, easier enough for sushi/atonement spam if they can turn the mob when your shadows are down.

If anything, your cotanks can be your DDs: the sam, drk, and mnk, with /nin. While it's a little harder for mnk/nin to shift mob hate frequently on sky stuff, drk and sam have an easier time with it. A cor would push you along with faster kills but another pld would give you a bigger safety net (2nd atonement speeding things a bit as well).

Spaghetti Pescatora gives both HP and DEF (albeit small). The +1 is worthwhile. I think than on stuff like Genbu, you should eat Carbonara for the ATT, or for anything if you hitting for 0's. Dorado Sushi is also a good investment if you are looking to Atonement spam and your support is on the ball (Stun, Songs, Cures, etc.), provided you don't hit for 0's (i.e. get reliable dispellers).
